It’s officially summer and farms, home gardens, and even pots on windowsills are producing fruits, vegetables, and fresh herbs. This breakfast bowl was inspired by the early summer harvest - tiny new potatoes, endless zucchini, homegrown garlic, sun-ripened tomatoes, and, of course, fresh basil. Because fresh basil belongs on everything! This is an easily adaptable recipe, you can substitute whatever vegetables look fresh and delicious from the farmer’s market and top with a fried (or poached or scrambled) organic egg.
